Perfecting the Art of French Fromage

Tips from Chez Olivier – a French Restaurant in Melbourne

Fromage is the French term for cheese, which is more than just a dairy snack in the Western European region – it is a tradition. With over 600 varieties of cheese, France is known as the most successful cheese growing region in the world, which is why so many popular French restaurants are incorporating cheese delicacies into their menus.

Close to half of the population of France eat cheese on a daily basis, which is a good indication of just how much of a staple cheese is in all regions of France. Much the same as French wines are cultivated in particular regions of France, certain cheese varieties are unique to certain regions and contribute to their distinctive tastes. Paris and the northeast of France concentrate on the well known Brie and Camembert cheese varieties, whereas the less internationally known cheeses such as Livarot and Boursin are produced in Normandie.

This specific divide between individual cheese regions was introduced thousands of years ago by the French government and is referred to as the Appellation d’Origine Contrôlée (AOC) which translates as the controlled designation of origin. Wines, cheeses and other produce that have been granted an AOC order of approval are said to then have an AOC status. In order to gain an AOC status the cheese variety needs to be produced following strict guidelines that are unique to a particular region. Certain criteria such as the technique used to make the cheese, the ingredients and the ageing process need to be met.
